Oven baked sweet potatoes, potatoes and carrots
A wonderful side dish.
- 1 large sweet potato
- 4 middle sized potatoes
- 3 carrots
- mashed garlic
- olive oil
Peel potatoes, sweet potato and carrots. Dice to small pieces. Cook in boiling salt water for no more than 10 minutes! The sweet potato can even be boiled for a few minutes less than the potatoes and carrots.
Take a large glass dish you will cook the vegetables in. Pour olive oil into the bottom (about 1 dl). Put the cooked vegetables in it, add salt and pepper and gently mix with oil (gently, because sweet potato might otherwise be mashed up). Finally, add small pieces of butter to the top.
Put into oven at 180 C for 30 minutes.
Take it out, and use a potato-masher to push down on the vegetables, gently. You do not want to mash them, you just want them to slightly expand onto the bottom of the dish.
Add the marjoram and thyme on top, and apply the mashed garlic.
Cook for another 30 minutes in the oven.
